Closing a can...

I did it...I closed the can!
Of PEACHES!! Several cans in fact...well jars. I had a big box of peaches to preserve for my food storage. I went over to Trish's house where she had all the tools needed for the process. PLUS friends to hang with while we peeled, cut and boiled. It was so fun! I had enough peaches to get 14 quart jars of sliced peaches and 14 smaller jars of peach jam. I must admit, I'm a bit more excited about the peach jam...mmmmmm, peach jam...

First, we had to steam the peaches so that the skins would peel right off.

Most of the skins would fall right off the peach, there were some stubborn little guys though. Then we cut the peaches up into chunks and slices and shoved them into jars. Filled the jars with syrup, placed the lids on the cleaned jar tops, and boiled the jars to seal. So much easier than I ever thought.

Here's what I ended up with that day. 28 jars of peach heaven!
I did have some jars not take...7 of them to be exact. Trish was able to re-process 3 of them so only 4 jars were a loss. So my final was 14 jars of jam and 10 jars of peach slices.

What do you MEAN you LOST 4 jars! Those are your todays reward for what you have done! If you can't eat them all today, the rest will keep in the fridge untill tomarrow! ENJOY!!
